Navajo Tacos
My husband wanted me to put this recipe on my web page so his Boss could see it and use it. It is really a good meal for supper and quick.
I used my bread machine to do the dough and used the dough setting. Or you can just use your regular bread recipe or Roades Bread dough and do it, I would imagine.

1/8 cup warm water
2 tsp. yeast
3 tlb. sugar
2 cups of white flour
1 cup wheat flour
1 cup water
1/1/2 tsp salt I used lite Salt
1 1/2 tsp applesauce in place of oil
1 1/2 tlb. powdered milk

Topping on Tacos

1/2 cup refried beans
2 tlb. shredded cheddar cheese
2 tlb. salsa or however much you want
1 diced tomato
1/2 cup shredded lettuce.
1/4 cup diced onion

I added 1/8 cup water first then I added the yeast, sugar and flour. Then I added the other cup of water, salt, applesauce, milk.
Set it at the dough setting when it has mixed up good. I let it go until there were 51 min left then I took it out.
Divide into 4 balls and pull dough out stretching it into a circle. I heated oil in a pan
and let it get warm on medium heat. I fried it until it was real dark brown on both sides.
Then you put the beans and cheese on top and microwave until cheese is melted
Then add the rest of toppings and it is ready to eat.

Crepes
They tried these at a cooking class in my church and a man demonstrated them for us. He said his grandkids beg him to fix these for them for breakfast when they come over.
1 cup milk
2 eggs
1 cup flour
1/2 tsp salt
2 tlb. Oil
1/2 tsp vanilla
I would use medium heat on this and a cast iron fry pan.
Scant cup of batter pour into a pammed pan & turn pan until batter covers bottom
of pan. Cook a few seconds & use a spatula to turn. Push hard on pan to loosen
crepe & turn over after it turns from shiney to dull. Loet cook a few seconds more. Remove and keep crepes covered to keep from drying out. Stack between wax paper.
You can spread 2 tlb. sugar over them jelly.
I tried using them as a breakfast burrito instead of a floured tortia. They were a little delicate to pick up but were really good.



 
"Rickys fingers

These my mom used to fix for us when I was a little girl she called them Lady fingers
my son kept the tradition going and he calls them Ricky's fingers.

1 egg
2 cup flour
1 tsp salt
1 cup milk
1 tsp baking Powder
1 tlb. Sugar

Mix up and drop by teaspoons full in hot melted Oil. Cook over med heat until golden
brown. Pour hot syrup & butter over it. Very easy and quick and the kids love them .
